The ICFD conferences were initiated in 2012 in Cesena, Italy, within the framework of INFOGEST. Since then, they have become a major scientific event that focuses exclusively on food digestion. The conference covers oral processing and sensory properties of food; food structures, digestion and imaging technologies; bioaccessibility/absorption of beneficial and harmful compounds; in vitro, in vivo, and in silico models of digestion and absorption; and the impact of food on gut microbiota. The 8th edition of the conference achieved a record number of 400 delegates and strengthened connections with the Latin America branch of INFOGEST. This issue of Food Research International (FRI) includes papers based on presentations from ICFD2024, held in Porto, Portugal, from 9th to 11th April.
